Ingredients
  

For the Salad:

  • 4 cups mixed greens spinach, arugula, romaine, or any lettuce blend
  • 1 cucumber sliced
  • 1 avocado diced
  • ½ red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1 cup fresh berries strawberries, blueberries, or raspberries
  • ¼ cup feta cheese crumbled (optional)
  • ¼ cup nuts almonds, walnuts, or pecans for crunch
  • 1 tablespoon fresh parsley or mint chopped (optional)

For the Dressing:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice or balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions
 

  • repare the Greens: Wash and dry the mixed greens thoroughly using a salad spinner or towel.
  • Chop the Veggies: Slice the cucumber, dice the avocado, halve the cherry tomatoes, and slice the red onion. Optionally, soak the red onion in cold water to reduce sharpness.
  • Make the Dressing: Whisk olive oil, lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl until combined.
  • Toss the Salad: Combine the greens, veggies, and berries in a large bowl. Drizzle the dressing over and toss gently to coat.
  • Serve: Top with feta cheese and nuts, then serve immediately.
