For the Salad:
- 4 cups mixed greens spinach, arugula, romaine, or any lettuce blend
- 1 cucumber sliced
- 1 avocado diced
- ½ red onion thinly sliced
- 1 cup cherry tomatoes halved
- 1 cup fresh berries strawberries, blueberries, or raspberries
- ¼ cup feta cheese crumbled (optional)
- ¼ cup nuts almonds, walnuts, or pecans for crunch
- 1 tablespoon fresh parsley or mint chopped (optional)
For the Dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice or balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
repare the Greens: Wash and dry the mixed greens thoroughly using a salad spinner or towel.
Chop the Veggies: Slice the cucumber, dice the avocado, halve the cherry tomatoes, and slice the red onion. Optionally, soak the red onion in cold water to reduce sharpness.
Make the Dressing: Whisk olive oil, lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl until combined.
Toss the Salad: Combine the greens, veggies, and berries in a large bowl. Drizzle the dressing over and toss gently to coat.
